Caramelized Sweet Onion Slices 3 ea Large Spanish Sweet Onions (about 3 lbs)
1/4 c Butter
3/4 c Granulated sugar
3 tb Packed brown sugar
2 tb Dried thyme, crushed
1/2 ts Salt
1/8 ts Pepper
Peel and cut onions into 3/4 to 1" slices. Microwave slices at high (100%) 5 minutes. Heat butter in large skillet; add onion slices. Combine sugars, thyme, salt and pepper. Sprinkle 1 tablespoon sugar mixture over each slice; cook over medium-low heat about 10 minutes on first side. Turn slices, sprinkle each slice with 1 tablespoon sugar mixture and cook 10 more minutes. Turn slices and cook 1 minute to caramelize sugar topping.
