Chicken Kapama Style 3 lb Chicken (up to 4)
4 tb Butter
1 lg Onion; chopped
2 Cloves garlic; minced
1/2 c White wine
1 Inch cinnamon stick
1/4 ts Sugar
1 Bay leaf
1 cn (16 oz) whole tomatoes; chopped
2 tb Tomato paste; OR 1 cn (8 oz) tomato sauce
Salt and pepper
Cut chicken into serving size pieces; wash and towel dry. In a heavy saucepan melt butter; brown chicken pieces. Remove to a plate and set aside. Over Medium heat, add onion and garlic to saucepan and brown lightly. Add remaining ingredients and simmer for 1- minutes. Return chicken to pan an simmer for 45 minutes or until chicken is tender.
