Cheesy Fish Toss

1 1/2 lb Cooked smoked fish - cod; haddock, pollock - flaked
1 1/2 lb Cooked white fish - cod; haddock, whiting - flaked
1/2 lb Cheddar cheese -; (1/4 red, and 1/4 white cheddar)
3 Tomatoes - quartered
1 sm Bunc scallions - chopped
1 Head lettuce

Zippy Green Dressing
6 fl Olive Oil; (or other good quality oil)
2 fl Vinegar
2 tb Finely chopped onion
2 tb Finely chopped green pepper
2 tb Sugar
1 1/2 ts Dry mustard
1/2 ts Salt
1/8 ts Cayenne

Prepare vegetables and cheese. Combine all the ingredients and toss in Zippy Green Dressing.

Zippy Green Dressing:

Combine all the ingredients in a screw top jar. Cover and allow to stand at room temperature for 1 hour. Shake to blend thoroughly.
