Lentils With Rice (Moujadara)

1 1/2 c Lentils drained
8 c Water
1 1/2 ts Salt
1/4 ts Pepper
1/2 c Rice (washed and drained)
1/2 c Vegetable oil
1 md Onion (julienned)

Wash lentils, drain and place in saucepan. Cover and cook for 1 hour or until lentils are tender.

Add salt and pepper to the lentils. Cook at a steady boil on low heat for 25 minutes, stirring occasionally.

Saute onions in oil until onions are a golden brown. Add to cooking lentil mixture, stir and remove from heat.

Serve hot or cold with cold yogurt, a salad, pickles and a squeeze of lemon over each individual serving.
