Lobio

225 g Red kidney beans, soaked overnight
150 ml Olive oil
4 x Cloves of garlic, chopped
120 g Walnuts,roughly crushed
2 ts Paprika
Pinch cayenne pepper
Salt and fresh grd. pepper to taste

Cook the beans in plenty of boiling water for 45 mins. or until tender. Drain. Heat half the olive oil, throw in half the garlic, cook for a moment then add the beans and half the walnuts. Heat together gently and season well with the paprika, cayenne, salt & pepper.

Meanwhile, put the remaining oil, garlic and walnuts in a food processor. Blend to a thick paste and when the beans are hot, stir this in. Can be served hot or chilled for a bean salad.
